Animal Welfare and Nutrition Information

What type of beef does Buffalo River Beef offer?

All Buffalo River beef is pasture-raised. This means animals are not confined to a feedlot and are able to roam freely and behave naturally on the pasture. This is important, as roaming can function as a natural fertilizer, benefiting soil and water health.

We also offer grain-finished beef from the U.S., giving our members more options while ensuring our products meet rigorous sourcing standards. Our grain-finished cattle graze on grass and forage in open pastures and are not confined to feedlots. Grains are added to their diet near the end of their lives, resulting in increased marbling, a tender texture, and rich flavor.

You can always be confident you’re getting what you picked— we clearly label our product so you can see all the sourcing and standards for that product before you add it to your box.

What do your cows eat?

Our cattle are pasture-raised which means they are not confined to a feedlot and have continuous access to pasture. This enables them to roam freely and behave naturally on pasture. Our grain-finished cattle are initially raised on pasture and eat grass and forages. Towards the end of their life, their diet expands to include hay, silage, and grain which is fed to the cattle while on pasture.

Are your animals humanely raised and processed?

Yes, our animals are humanely raised and cared for every step of the way. We are dedicated to doing the right thing— never cutting corners, and always looking for ways to improve our processes.

Where does your beef come from?

The beef we serve comes primarily from our ranch at Buffalo River Beef, where cattle are pasture-raised and cared for with the highest standards of animal welfare. The cattle live freely on open pastures, are treated humanely, and raised in a way that supports both their well-being and the health of the land.

On occasions when we need to supplement supply, we work with a neighboring farms. This partner is held to the same protocols and values, ensuring the beef is of the same trusted quality. All participating ranches are committed to humane treatment, sustainable practices, and providing wholesome, flavorful beef you can feel good about enjoying.

In short, whether your meal comes from Buffalo River Beef or one of our partners, you can trust it has been raised responsibly, with care for the animals, the land, and for you.

Beef on the Hoof and Freezer Beef

Information for buying meat in quarters, halves, and whole

What is the process of buying meat on the hoof?

First thing to know, you are not buying individual cuts of meat, you are buying the animal.

Once you buy the animal, you will fill out Our Cut Options Sheet with options on how you want it processed — as in how you want the animal to be butchered. We will then take your animal to the processing plant on your behalf.

Once the animal is slaughtered, the hanging weight will be available. Hanging weight is how much the animal weighs after it has been slaughtered, skinned, and had the intestines, head, and feet removed. Typically, hanging weight is roughly 65 to 67% of live weight. Once the hanging weight is determined, the customer will fill out the cut sheet.

You will be buying the animal based on a hanging weight per pound. For example, if the live weight was 1200 pounds, the hanging weight would be 780 pounds. If the selling price is $7.50 per pound, the purchase price would be $5,850.

The purchase price of the animal is paid directly to Buffalo River Beef. In addition to the purchase price, you will be responsible for the cost of any additional charges for special customization. These costs are paid to the processing plant where the live animal will be delivered. The processing plant is not owned by Buffalo River Beef.

After the animal is slaughtered, the animal is left hanging at the processing plant between 14 and 21 days to age. Longer aging times are available for an additional fee. Once the animal has aged at the desired time, the animal will be processed according to the instructions on the prepared cut sheet.

After the animal is processed, you will be notified to pick up your vacuum-sealed meat at the processing plant. You may have the meat delivered for an additional charge of $2 per mile from the processing plant to the delivery location.

If you purchase a quarter or half of an animal, you may need to wait a few weeks after your purchase for us to sell the remaining portion. Alternatively, you could team up with family or friends to buy a whole animal and then divide it among yourselves.

Our cut options form is available click here.
